The smell of thyme and freshly baked bread wafted over the tents as the drones flew over Beirut

Soubhiye Zeiter, 63, who is known as Om Mohammed, opened a small bakery in a refugee camp in Beirut after fleeing the war between Israel and Hezbollah, AP News reports. Although she lost her home and was displaced along with 15 other family members, she became one of the community’s central figures. Every morning dozens of people gather around her tent, volunteers help her bake, and the space has become a symbol of warmth and solidarity in the midst of war.

The fighting between Israel and Hezbollah has displaced more than a million people in Lebanon. Many have sought refuge in schools, public buildings and makeshift camps. When humanitarian aid did not arrive, she began baking bread herself.
